About the Recipe

Ingredients
2 (1 lb) pork tenderloins
1 (6 oz) can pineapple juice (about 3/4 cup)
1/2 cup honey
1 tbsp minced garlic
1 tbsp ginger, minced
2 tbsp soy sauce
3 tbsp brown sugar
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp crushed red pepper
Preparation
Trim the pork tenderloins by removing the silverskin with a sharp knife. Cut pork tenderloin into 2-inch medallions and chill.
In a large bowl, whisk together pineapple juice, honey, garlic, ginger, soy sauce, brown sugar, salt, pepper, and crushed red pepper.
Add pork medallions to the marinade and allow to marinate for 10 minutes.
Preheat the air fryer to 450°F.
Place pork on a greased tray in the air-fryer basket. Cook for 10 minutes, turning once halfway through. Pork is fully cooked when the internal temperature reaches 145°F.
Remove from the air fryer and allow it to rest for 3 minutes before serving.
