About the Recipe

Ingredients

3 lbs pork belly (skin removed, cut into 1-inch cubes)

2 tbsp yellow mustard (binder)

2 tbsp BBQ rub

1/2 cup BBQ sauce

2 tbsp honey

2 tbsp butter (cubed)

2 tbsp brown sugar



Preparation

Preheat Smoker – Set to 250°F (120°C) using hickory or applewood for flavor.

Season the Pork – Toss pork belly cubes with mustard, then coat evenly with BBQ rub.Smoke – Place pork cubes on a wire rack or directly on the smoker. Smoke for 2.5-3 hours until they develop a nice bark.

Toss and wrap: Transfer the pork to an aluminum pan, mix with butter, honey, and brown sugar, cover with foil, and return to the smoker for 1.5 hours.

Glaze – Remove foil, toss with BBQ sauce, and cook uncovered for another 30 minutes until caramelized.

Serve & Enjoy – Sticky, smoky, and melt-in-your-mouth delicious!
